How to store olive oil
Olive oil is extremely sensitive to light, heat and air. That is why the most suitable containers are dark glass or stainless steel made. These materials do not allow the light to pass through and keep the oil fresh inside the container.
Cellar is the best place in the house where to store the oil, in a shaded position far away from heating sources at a room temperature between 10 and 15 C.
Check that new containers don't smell badly from previous liquids contained and in case wash with hot water and sodium carbonate and rinsen carefully.
Make sure that containers are always full with oil. If air comes into contact with oil, ossidative processes take place. This may lead to the formation of mixes highly dangerous for human health.
At temperatures lower than 10 C the oil might freeze. Freezing does not cause any damage to the fragrancy and the quality of the oil. On the contrary, temperatures above 15 C may spoil the oil fragrancy.
